Speck Alto Adige is not simply smoked ham — it is a protected product with rules about curing, smoke temperature and the mountain air it hangs in. This walk starts in the centre of Bolzano and ends with someone qualified to explain all of that: an official Speck Ambassador.
The tasting is the point. You learn what to look for in the fat, the smoke and the cut, and you leave able to tell a good one from a supermarket one.
